Pork and Prawn Stirfry with Oysters Sauce. It’s been some time since I posted stirfry. Stirfry dishes are one of OPC’s favourite food category. Today I would like to share a version of pork and prawns stirfry combination, it is fairly easy, simple and obviously similar to some of my stirfry dishes. I have been using oyster sauce in most of my stirfry dishes and I have mentioned on several of my stirfry dishes that you’ll never go wrong using oyster sauce, it has a salty and sweetish taste that we Pinoy loves.
To make the dish as I mentioned above is fairly easy, just marinate the pork in soy sauce for a few minutes. Then it is straight forward stirring all the ingredients at the right order. For this recipe I opted of using pork belly instead of the usual pork loin, with this I have included an extra step in cooking the pork belly which requires longer time to cook. This is done by simmering the pork with the wok covered for a few minutes before stirring in the other ingredients. Here is the recipe of my Pork and Prawn Stirfry with Oysters Sauce.
Ingredients:
1/2 kilo pork belly, cut into strips or thin slices
1/2 kilo large to medium size prawns, shelled, de-veined
3-4 stalks leeks or large spring onions, cut into diagonal sections
2 small size red/green bell pepper, cut into strips
2 thumb size ginger, cut into thin strips
2-3 cloves garlic, chopped
2 large size onion, sliced
3 tbsp. soy sauce
1/4 cup oyster sauce
1 tsp. sugar
salt to taste
cooking oil
Cooking procedure:
Place the pork in a big bowl, add the soy sauce and mix thoroughly. Keep aside to marinate for at least 15 minutes. In a wok heat 2 to 3 tbsp. of cooking oil until it start to smoke, add in the ginger and garlic and stir cook for about half a minute. Add in the pork strips and stir cook for 2 to 3 minutes. Then add in about 1/2 cup of water cover let simmer for 8 to 10 minutes stirring occasionally until the most of the liquid has evaporated and turn into an oily sauce. Add in the prawns and onion, continue to stirfry for 3 to 5 minutes or until color start to change to orange. Add in the bell pepper and leeks/spring onion and stir cook for another 1 to 2 minutes. Correct saltiness if required. Serve hot with a lot of rice.
